What is Rummaniyah?

Rummaniyah is a beloved Palestinian dish that combines classic staple ingredients such as lentils and pomegranate molasses. The result is a savory and tangy delight that’s both hearty and healthy. It’s perfect for those who are looking to explore new flavors and enjoy a wholesome meal.

Ingredients:

  • 1 cup brown or green lentils
  • 4 cups of water
  • 1 large eggplant (peeled and cut into cubes)
  • ¾ cup lemon juice or pomegranate juice
  • 2 tablespoons sour pomegranate molasses
  • 4-5 garlic cloves (crushed)
  • 2 tablespoons olive oil
  • 1 tablespoon flour (or corn starch for a gluten-free option)
  • 2 teaspoons cumin powder
  • Jalapenos (Optional)
  • Salt to taste

Toppings:

  • Pomegranate seeds
  • Lemon slices
  • Fresh mint, thyme, or parsley

Instructions:

  1. Cook the Lentils: Place the lentils with water in a saucepan, bring to a boil, cover, and then continue to boil for 10-15 minutes until the lentils are softened.
  2. Add Eggplant: Add the eggplant to the lentils, along with salt and cumin. Cover the pot and lower the heat to medium. Let it simmer for another 25 minutes.
  3. Mix in Flavors: Mix the flour with lemon juice and pomegranate molasses, then pour over the pot. Stir well and let it cook for another 5 minutes.
  4. Prepare Garlic and Chili: In a separate skillet, heat the olive oil and add the crushed garlic and green chili (optional). Stir until golden brown, then pour this mixture into the pot.
  5. Serve and Garnish: Place the Rummaniyah in serving bowls. Garnish with pomegranate seeds, a slice of lemon, your choice of mint, thyme, or parsley, and a drizzle of olive oil.

Serve this dish at room temperature, accompanied by a fresh salad and/or flatbread for a complete meal. The combination of lentils and pomegranate molasses creates a unique flavor profile that’s sure to delight your taste buds.
